Roasted Brussels Sprouts With Cauliflower

This dish is ideal for those who want to avoid meat for managing diabetes. The anti-inflammatory effect of phytochemicals found in cauliflower called glucosinolates protects cells and tissues from inflammation. Also, it has high amounts of dietary fiber that helps to keep gut health and manage cholesterol levels. Likewise, brussels sprouts are rich in antioxidants and have high amounts of fiber.

The ingredients:

  • 1 cauliflower cut into one-inch florets
  • 2 cups of halved brussels sprouts
  • 3 tablespoon olive oil
  • 3 cloves of garlic thinly sliced
  • ¾ tablespoon salt
  • 1 tablespoon freshly chopped rosemary
  • ½ tablespoon of fresh ground pepper

Mix the prepared cauliflower and brussels sprouts in a bowl along with garlic, olive oil, pepper, and rosemary. Spread this on a baking tray layered with a single sheet of baking paper and cook in a preheated oven for 15 to 30 minutes.

Miso Soup

Miso soup is a traditional Japanese dish that has many health benefits. Miso is a paste made using fermented soybean, and it has many health benefits. It is rich in B vitamins, vitamins E, K, and folic acid. Also, it is a good probiotic plant-based food that helps to maintain gut health.

The ingredients:

  • 3 tablespoon miso
  • 4 cups of water
  • 1-1/2 oz Asian noodles
  • 3-1/2 oz of soft tofu
  • ½ cup onion
  • 1 tablespoon of dried wakame seaweed

In a pot, boil water and cook the dried seaweed in it for 5 minutes over medium heat. Simultaneously prepare the Asian noodles separately. Mix the miso with hot water in a small bowl; whisk it until completely smooth. Now add this into the broth of seaweed along with the cooked noodles, onions, and tofu.
